Talented Chef Patron Mark Birchall creates delicate, produce-driven menus inspired by our exceptional surroundings and home grown ingredients. Lancashire-born, Mark is a champion of the local area and its many producers, farmers and artisans.
Mark was crowned ‘Chef of the Year’ at The National Restaurant Awards 2025 and awarded the ‘Chef Award’ at The Catey’s 2025.
